What do you put in the jars with bacon to can it?

Bacon and that’s it.

I cut it up in 2 inch pieces, I fry it up, put in hot sanitized jars, process it- pressure canner 12 l.b.s for 75 minutes. (I use half pints). I wipe the rims of the jars with wet vinegar towel, to cut any grease residue that might keep the jars from sealing. That’s it, don’t put anything in it. Just the bacon.

There will be a small amount of liquid and fat in the jar.

The more you fry it, the crisper it will be after processing. It of course continues to cook in the jar. And yes, it turns out as crispy fried bacon browns right in the jar.

Simply warm up before eating it...it’s already cooked.

And yes, if you check USDA sites, it does tell you how to process meats in STRIPS...
