Nice graphic, but it extends a common mis-perception. New Orleans is “creole” cuisine. “Cajun” cuisine is off to the north and west of N.O., centered around the Opelousas/Lafayette area. There are some similarities (after all, their “bases” are both French), but there are significant differences as well. Both well worth eating, but to my tastes, Cajun is superior.
