Glad you are interested in trying the recipe. Forgot to mention, I usually substitute brown sugar for the granulated sugar. We like it extra spicy, so I usually add a few dried red chili peppers to the crock pot.

Perry, then the agriculture commissioner of Texas, sampled the Carolina barbecue and declared, "I've had road kill that tasted better than that."

(He's had road kill before?) But I live in North Carolina, and I agree with him 100% that the BBQ here leaves a lot to be desired. Makes me miss Georgia sometimes.

You underestimate our neighbors south of the border in Baja Carolina. They plop yellow mustard in pork cooked to a mushy pulp and call it barbecue, so the percentage is much higher, lol.

Oh, my mistake. Y'all stew armadillo roadkill with chili peppers, it apparently hides the skunkiness. On the halfshell is reserved just for fresh caught armadillos.

Seriously, though, have you never wondered why armadillos were called “Hoover Hogs” in Texas? It's because y'all ate ‘em, lol. Go to Google images and looked for them being barbecued in Texas.

I honestly think it's safe to say that the roadkill Governor Perry has eaten was armadillo.
