I made the cuts and such with the eye to hang a whole turkey in it.

I may start a little smaller and try a smoked chicken first, just for the experience.

I see the drip pan in the picture. Do you put any water in it? That's important. It stabilizes the temp and gives thermal mass to the low energy cooking of a smoker. I know, I smoke jerky in the dead of winter here in Wisc.

Yes on the water. I had to refill the pan 3 times during the 6 hours that brisket was in there.

The doggies were going crazy. They could smell the meat, but couldn’t get to it. Heh heh heh

Kool. You're on top of it. With my smoker, I only have to fill the pan at the start. The jerky takes about four hours and there's still a lot of water left.

Dogs just go nuts on smoked meat. A local butcher has smoked pig ears for sale as dog treats. Gotta watch the fingers when you're handing them out....

I think I had the fire too hot at times. Learning to tend it is going to be my big learning curve.

Temp control is a real stinker. And I have a propane smoker. Every little breeze or rain or snow makes me run out to make adjustments. Man, I learned one important lesson:

If you're lookin’, ya ain't cookin’

There's a price to pay for opening that door.
