They’ve been doing this for years and years. The pizza isn’t bad, but they cut it into little squares, which I personally don’t get.

Easier to eat in hand. Those big triangles of round pizza flop all over the place, and you have to fold it over to eat it without getting hit by food shrapnel. Also, if you're feeding children, little squares make it easier for little hands to hold, and less is wasted, because they're eating smaller pieces, so they don't take a few bites of a big piece and leave the rest. Bigger folks can just eat more little pieces. ;o)

Makes good sense. To me though, a piece of pizza without crust is wrong on many levels.

There's a place here that sells what they call "Sicilian Pizza", and it's baked in a half-sheet pan; 15x22 or so. It's nice thick bottom crust, and the way it's made, there are no real 'edges' to it. The toppings go right up to the edge of the pan.

It looks unusual, the first time you see all those squares of pizza but it's pretty tasty!
