At least a single kidney or partial liver can come from a living donor.

I do wonder how many people who oppose organ donation because it kills the donor would have the principles or the courage to refuse to accept an organ?

Could I? Maybe.

Could I refuse for my children, or ask them to stand up for principle and die?

Some good questions, about whether you could stick to your principles and not accept an organ whose "donor" was killed to get it. My first wife (God rest her soul) died of kidney failure. However, she wasn't a candidate for a transplant because the doctors were afraid that the immune suppressants would make her cancer come back. My daughter-in-law has lung problems, but is not a candidate for a transplant because she's diabetic. Thus far, anyway, I've not had to face the problem.
