I can manage cooking and baking. Just don't ask for cakes. I lost a 4.0 GPA to genoise.

Best training? A top restaurant in Dallas, Texas.

Best experience? Feeding 1400 troops in field conditions and getting a coin from the Chief of Services for the effort.

The kitchen, whether fine dining or military, is for young men. And that time has passed me by.

You are a member of a proud cadre of guys who have sweat over charcoal fires for ages turning raw meat, fish, shrimp and lobster into delectable repasts!

You know instinctively that only certain cuts of beef are worthy of placement on your grill: Sirloin, Porterhouse, T-Bone, New York Strip, and Rib-Eyes. Anything else is beneath your notice.

You have kept close the ancient wisdom of the Keepers of the Flame – there is no gas! There is only Charcoal!!

Size matters! If you can't bring a three-inch steak home on the grill, you're in the wrong line of work!

It's the American Way of Life! And you will pass it on to your sons and daughters!

Hope that wasn’t too much to digest.
Threw in the ash cake recipe cause it’s
handy to make on a fire, and you can use
whole wheat flour just as well.

You can cook steaks on the coals like that too,
just rub them with a little salt first and blow
the ash off the coals first.

Have fun. wish it was deer season again but
it keeps me going all summer long.
