Nitrogen cocktail iced after woman is hospitalized in Miami

MIAMI BEACH, Fla. – A trendy South Beach restaurant has pulled liquid nitrogen cocktails off its menu after a woman was served a drink with too much of the sub-zero liquid and was rushed to the hospital with a burned esophagus.

Luxury "cryogenic cocktails" have become popular, with bartenders using small amounts of liquid nitrogen to create smoking drinks. The liquid can also instantly freeze everything from ice cream to fruit, which then easily shatters into glass-like shards.

Beyond stupid. Comes from having several generations of uneducated & woefully ignorant people.

And look at the bars serving these things. The liabilities of selling this concoction are off the charts. Don’t these businesses listen to their lawyers?

When I was a kid I saw several liquid nitrogen presentations. Zowie!

A liquid nitrogen cocktail is any mixed drink whose preparation involves the use of liquid nitrogen. Popularized as a novelty because of the smoky, bubbling "cauldron effect" it produces, liquid nitrogen is controversial as a cocktail ingredient because it boils at −196 °C (77 K; −321 °F) and its consumption is thus potentially lethal. However, it is not a regulated substance in most countries and there is little control of its use.

The culinary use of liquid nitrogen is mentioned in an 1890 recipe book titled Fancy Ices authored by Mrs. Agnes Marshall, but has been employed in more recent times by restaurants in the preparation of frozen desserts, such as ice cream, which can be created within moments at the table because of the speed at which it cools food. Similarly, liquid nitrogen has become popular in the preparation of cocktails because it can be used to quickly chill glasses or freeze ingredients. It is also added to drinks to create a smoky effect, which occurs as tiny droplets of the liquid nitrogen come into contact with the surrounding air, condensing the vapor that is naturally present.

Because of its low temperature liquid nitrogen can be extremely damaging to body tissue, causing frostbite and cryogenic burning on contact. If ingested it can lead to severe internal damage, destroying tissue in the mouth and digestive tract. Furthermore, as it evaporates liquid nitrogen releases a large volume of gas, which means it can burst the stomach if swallowed in a sufficiently large amount.

I cannot imagine. Burning your esophagus is a frightening thing -there are people who aren’t able to swallow food for the rest of their lives.

I think that is different. In that case, they are using as a tool to prepare the ice cream, not an ingredient to be served in it.

You can call them and the guy (really friendly and nice guy) who sells it can tell you ALL ABOUT the liquid nitrogen. It keeps the ice cream cold.

When I was a kid (high school) a fellow student and I put on liquid air demonstrations for a science fair. Our physics teacher got the liquid oxygen and liquid nitrogen from the cryogenics lab at Iowa State College (University). We demonstrated the oxidative abilities of the liquid oxygen, and the super cooling abilities of the liquid nitrogen. With the liquid nitrogen we froze a piece of inner tube (for a nail) and made a mercury hammer. Then we drove the rubber nail into a block of wood with the hammer. Took a hollow rubber ball, bounded it, then immersed it in the liquid nitrogen and threw it against a wall...of course it shattered. Then I immersed my hand into the liquid nitrogen, and after a few seconds withdrew it, in full possession of my fingers and they still had full movement. That was when we got the Oh’s and Awe’s. That works, because the heat of the hand gasifies the nitrogen in contact with it and forms a temporary insulating layer. We had 5 demonstrations in the course of the evening. And I immersed my hand each of those 5 times.

Risky? No, not if you understand the laws of thermodynamics.

Some years later, in industry, we used liquid nitrogen to freeze the tube going into the braider in making wire braid hydraulic hose.

We had a cryogenics demonstration when I was in junior high. The guy took a piece of gravel and placed it on an anvil.

He then put a drop of liquid Oxygen on the gravel.

Then he hit it with a hammer.

BANG!!!

We used it to run a IR camera. Every time we collected a load (lasted about 10 days before it all boiled away) someone had to read and sign a safe handling screed.

To be fair to the bar in the story, I cannot recall that drinking it was specifically prohibited.

I have a true story from a good friend. My friend kept his liquor in the freezer in an attempt to hide it from teenage Son, when Son stayed at Daddies. Daddy always marked the liquid level on his bottles to track this. Well, son was sneaking liquor from the bottles and bringing the level back up with water. Eventually, the “liquor” started freezing! BUSTED!! Son wasn’t good at physics OR chemistry.

Another case of stupidity. Life really IS harder if you are stupid.

Life is a hands on experience. Don’t put your life in somebody elses hand if you can manage for yourself. If you can’t for whatever reason, be sure they know what they are doing. I don’t believe in do-it-youself surgery or other similar things so I leave them to the experts.

Of course she was the victim, it was really the stupid bar tender’s fault. But she should have anticipated there was a risk.

There is an ice cream store here, called Smitten, which uses the liquid nitrogen to keep their ice cream REAL cold.
I called them just a couple of hours ago and had explained to me the dangers of eating the stuff.

We did several interesting things with the liquid oxygen...

We soaked a cigarette in it, then with the cigarette in a petre dish we lighted it...puff, it was gone!

We heated a carbon rod (one for carbon arc lights in the old time 35 mm movie projectors) in a meeker burner to where it was glowing, then put the tip into a beaker of liquid oxygen...it burned every bit as bright as it would have in the projector.

Think about this. Several thousand years ago (at the least) someone designed and constructed the Great Pyramid. It has stood there ever since. Nothing we build will last that long, and we don't know how they built it. We could not build it now, using the tools that we know they had.

We have created so many 'conveniences' that most of the public cannot survive with them. Many people are smart. But usually it is focused in one area.

We aren't as 'smart' as our ancient ancestors because we don't have to be smart to survive anymore.
