Bovines, Ovis, Capras (Cows/Bulls, Sheep/Rams, Goats/Billies), and Suids (Pigs/Boars) do not have the same ability to care for humans that domestic felines and canines do. There are many, many instances of dogs protecting their owners even at the cost of their lives. Cats also are very protective, although to a much lesser extent, but some still possess that ability to care about humans that the majority of wildlife does not.
When a member of the animal kingdom is capable of expressing their love and affection towards a human, usually their owner, that has automatically elevated them beyond the level of livestock and to the position of companion and possible protector.
This is the reason why dogs and cats are not considered livestock in our modern civilized world. You can not be hugging your pet and having it love you back some evening, and then be so callous as to kill it and eat it some time later if you have any feelings at all.
The ability to love trumps all.
There are exceptions here and there, according to some reports, and sometimes it is surprising which animals suddenly decide to bond with a human, but even ursines have been known to bond with and protect certain human individuals.
Of course, it should be 'use sparrows', not 'used sparrow'

Yep, and why? What makes a horse something so special that, even when dying, it can’t be used to feed starving people?
The problem is, once you have firmly settled that SOME animals have a right to not be eaten, how do you keep other animals from ending up on the list.
People already keep many domesticated livestock animals as pets. So far as I can tell, the only reason you can still eat rabbit is because it seems so reasonable to be able to that nobody yet has decided to fight it.
Had horse while serving in Sicily, one of the best steaks ive ever had and my family raises beef cattle.
