Btw, I'd love your recipe for peach cobbler.
At one time I had three peach trees in my yard - the one tree gave peaches so big you had to use both hands to eat them. Two would make a pie!
I also had a mature apricot tree which gave neither blooms nor fruit for about three years. My neighbor at the time came over and walked around it several times in one direction, and several times in the other direction. She leaned up against the tree, looked at me and said: "It needs iron." She retrieved some nails from her garage and buried them around the base of the trunk. The next year I had apricots like you wouldn't believe! It doesn't seem like summer unless I can have peaches with my cereal in the morning. :)
In the South people grow a lot more yellow squash than zuchini (sp?) ..... but it has the same habits. If you have more than one or two plants, you're going to have people running from you screaming because they figure you're trying to pawn more squash off on them ..... LOL!
Filling:
1/2 c Sugar
4 tsp Cornstarch
1/2 c Water or juice from peaches
4 c fresh peaches or canned peaches
Combine in saucepan sugar and cornstarch. Add water and blend well. Cook over medium heat, stirring constantly until it thickens. Add lemon juice and peaches. Turn into baking dish and add topping, below.
Topping:
1 c Flour
1/2 c Sugar
1 1/2 tsp Baking powder
1/2 tsp Salt
1/2 c Milk
1/4 c Butter or margarine, softened
2 tb Sugar
1/4 tsp Nutmeg
Preheat oven to 375 degrees F.
Topping:
Sift first 4 ingredients into mixing bowl. Add milk and butter and beat until smooth. Spoon or pour over filling in baking dish. Sprinkle with mixture of sugar and nutmeg. Bake 40 to 45 minutes. Can serve with whipped cream, ice cream or just plain. Note: My sister-in-law pours heavy cream over the cobbler serving, she grew up on a dairy farm and loves that cream.
When we lived in eastern NC, we used to have a garden and I did a lot of canning and freezing. But when we moved here, our lives changed drastically and we don't have the time for the gardening ...... and I don't even have room for a freezer in this house ..... :-(
I sure miss having all the fresh veggies and love hearing y'all talk about it. There's no better eating than veggies picked out of your garden and prepared fresh the same day!

Thanks for the recipe! It will be served with dinner one day this week-end. Of course, the main course will be Zucchini Something or Other, LOL! Grandpashy spent quite a few years in the south, and one of his favorite meals is fried yellow crook-necks and sliced tomatoes.
