Sexy Shrimp ScampiThis recipe has great possibilities for showing off your fancy footwork, by flaming this bad boy table side!
- 8 Tbs. butter
- 2-4 cloves garlic, finely chopped
- 1/2 cup chopped scallions (spring onions), green and white parts
- 1/2 cup sliced fresh mushrooms
- 4 to 6 large shrimp per person, peeled and deveined
- 2 Tbs. brandy (see tip)
- 1 tsp Worcestershire sauce
- Salt and cayenne pepper to taste
- Toast points for garnish
1) Melt the butter in a skillet over moderate heat and sauté the garlic, scallions, and mushrooms until tender, about 5 mins.
2) Add the shrimp and cook until they turn pink, about 3 minutes.
3) Add the brandy, Worcestershire sauce, salt, and cayenne and cook an additional 2 to 3 minutes, stirring frequently.
Serve over toast points.
TIP: If you wish to Flambé, substitute 2 Tbs. brandy, with 1 oz. 151 proof brandy. Carefully tilt the skillet forward add the brandy and light it with a gas stove flame or extended lighter. The burning will burn off the harsh liquor flavor, and replace it with a soft caramel taste.
Serves 4 to 6.
