Thanks for telling the story of the western Turks. Sounds much better coming from a non-Turk.

Personally, I don't have a clue about the history of yoghurt, but I can tell you that the Turk made good use of everything horse. Even the word "horse" is used as the root of many other words such as jump, attack, agressive, throw, etc.

Grate a large cucumber, mix with one quart of plain yoghurt. Add salt and garlic to taste, and a little olive oil.. Mmmm.

Add some water and chopped fresh dill, chill it (or add a few ice cubes) and you've got "tarator"!
