Last year my son was hospitalized for over a month....many tests and exams later it was discovered he had Celiac disease...his weight loss and health went down rapidly. When he changed his diet accordingly his health not only returned but has looked better an felt better than any other time in his life. However I would imagine they have already checked for this with Metmom.
Recently I read about these Vietnamese people who have autoimmune reactions to ALL GRAINS, not just wheat/rye/barley.
They have trouble with corn, oats, wildrice and japonica rice. The result is they can eat only indicum rice, and NO BAMBOO SHOOTS either.
They have a problem with potato. Apparently there are some little bits of chemicals from the peels that get into the starchy areas, and they are simply more sensitive to that than the rest of us who get away with peeling the potatoes.
So, what do they eat? Well, lots of indicum and tapioca. And fresh water fish.
You can make lots of different things out of those ingredients ~ rice noodles, rice paper, rice balls, rice-rice, fake bread, fake cakes, filler for use in making the gelatinous green stuff they eat a lot of (bandelon). Hey, I eat a lot of that. Vietnamese native pastries and sweets are my favorites because I can count on them not having even traces of wheat gluten, plus their bakery is right down the street.
Metmom is down to eating chicken and sheep meat. She had no problem eating ostrich. That right there points to a partially understood autoimmune reaction to various commonly eaten mammals. Thankfully I don't have that problem.
Another type of autoimmune reaction centers on beans ~ some people have difficulty with blackbeans and fava beans. Some people die from contact with those beans.
Yet others have difficulty with kidney beans.
You might think that would be easy to control ~ just don't eat kidney beans. Alas, there's a breed of white kidney beans that's been developed to produce huge quantities of alpha amylase. That's a digestive enzyme similar to beta amylase (found in your own saliva).
They take the beans, process them for the amylase, and then stick it into DOUGH CONDITIONER. The chemicals that some people react to with an autoimmune reaction are found in trace amounts in DOUGH CONDITIONER or any other product those white kidney beans are added to!
I started working on a list of things where kidney beans, or their extracts, could be found and it was just too much ~ literally everything can have kidney bean stuff in it ~ even meat from animals fed kidney bean residual meal.
I'm sure Metmom has been tested for all of that and found to have an allegy to them.
So the question is how to avoid contact. Obviously you must eliminate all pastries and pastas! Then candybars. Then Japanese confections. Then Chinese confections. Then just about everything else.
The only compensation is you can shop a very large grocery store in about 5 minutes.

My sense is it would be less stress and angst to her to send the suggestions to me by FREEPMAIL and I’ll save them to a folder and put them all in one doc for her to read and ponder when she feels up to it.
Unless she feels otherwise on a given day for whatever reason! LOL.
If I understand from similar ‘glimmers of hope repeatedly crashed cycles’ . . . it’s like . . . a new suggestion comes along . . . one appreciates the caring it’s offered in . . . maybe one’s been there and done that and the memory is of yet another dashed hope. Or, one hasn’t tried that and the prospect of mustering the hope and effort and resources to try yet another probably frustrating futile something is just not all that attractive. Yet, what if it IS the thing that would help. The tornness between the two can be exhausting.

Yeah. It decreases respiratory, sinus etc. stuff a LOT. At least that was the main change.
I know nothing about this food disorder.
I am so sorry for your plight Metmom....but rejoice in the courage and determination God has given you thus far...amazing fortitude!
My daughter in law just was relieved of severe asthma....she is alergic to dairy and all detergents. Could not rest at night...now is free of all that coughing.
I am glad you are looking further til there might be some understanding of what is going on with your system and hopefully find some answers. May the Lord give you all the strength needed to complete what is ahead...and we’ll all keep praying He will show the answer.

These were very high tech, very expensive, cutting edge "tests" ~ not something you can just go get.
Look up AUSTRALIA GUTEN VACCINE. Should get you a whole lot of articles going back over the last couple of years.
Dear Metmom, you have my most sincere prayers. As a life long allergic I can begin to understand your problem. I have NEVER been to the point that you are and have been tested but never to the extent that you have been.
I remember something my allergist said when I continued to wake up at 3 am with a screaming migraine. Allergy tests said I was barely sensitive to a certain food but after it was digested I was more allergic. They could not test for the affect it had on me after it was digested.
That is when I had to stop eating chocolate and corn because those were the offending foods. Other foods that I showed a slight allergy to could be eaten without consequence, such as beef and eggs.
Allergies are a strange and terrible problem and my prayers are with you in your quest to regain your health.
Thanks...my son would be interested in this I am sure...since he has stopped the glutin in his sysstem if he gets any he now breaks out in open sores.
Since I'm not one of those guys who is going to let the gluten vendors terrorize me into never leaving home I go to restaurants and I eat (the safe part of) submarine sandwiches.
The other day Wegman's, a high end grocery store, tricked me. They put finely ground bread crumbs in their vinegar and their oil.
OH MY WORD.
My son interrogated the lady at the deli counter to find that out and had her whimpering and crying and confessing that management made her do it.
YOU CAN'T GET GLUTEN FREE distilled vinegar at Wegman's deli counter. They take a perfectly useful and safe product and poison it.
To cover their tails they have a sign "This is not a gluten free station".
Before it's over that will be a gluten free station ~ we are 3.4% of the American market and we are tired of being played with.
Just cheering you up. BTW, that submarine problem was last Monday. I thought I’d died. I was so careful, and the whole family is trained. They can be trusted to get the right stuff!

MetMom...prayers sent up on your behalf, for your family and for the doctors treating you (that they have Divine Wisdom and Guidance in helping you). My heart trully goes out to you...as my daughter has Celiacs; my husband probably does (he is a non-traditional Type II Diabetic (it is so heavily found in his family) who is now recovering from his first (and we pray only) heart attack.
Getting my daughter diagnosed was awful; ‘they’ presumed some ‘sort of eating disorder’ (because, as you are painfully aware) has a very limited food selection. She too suffers from ‘gluten free’ menus that arent!!! and we worry that as she is getting married this Fall, and they will start planning for children that there will be more health problems her way.
Muawiyah, thank you for all of the info you have posted here (you probably don’t remember, but you were a wonderful help/resource a while back when my daughter was getting diagnosed). Food allergies/sensitivities are becoming much, much more common...but are still so hard to live with.

Amen to that. We now put an ‘X’ on margarine or butter containers that have been used for spreading on bread or toast. Honest. We think we made our daughter sick when butter (that had, as noted by the family CSI unit ‘visible crumbs’ was used to make mashed (from real) potatoes.
You are so correct...when you remove gluten totally a ‘few crumbs’ make such a painful problem.

For all this has been a problem for so many years, there’s very little I haven’t read about, heard of, been advised to do, or tried. I’m sure you were in the same situation.
I appreciate that people are really concerned and want to help and I do understand that that is the spirit in which it’s given, but I’m doing what I can and have some avenues I am pursuing.
My allergist has been fine, really. It’s only within the last year that it’s gotten to this desperate point. He’s a great guy, very understanding and easy to talk to. He takes his patients very seriously and I’ve never felt dismissed by him for any questions I have for him. General opinion is that he’s the best in the area, so I really hit it good when I found him. I’m not ready to change from him yet.
I will look into poi as it is something I haven’t eaten before. It’s possible I could tolerate it because of that.
I’ve had these problems well before I ever did antibiotics. I’m old enough to have been raised pre-anti-boptoc use. I didn’t really start them until my early twenties.
I have tried and continue to try different acidophilus and probiotic supplements. I have to be careful about what else is in them. I’m amazed at the number of them that have lactose or dextrose in them. Sugar is NOT what you want to give someone who has yeast problems and needs the supplement. It seems more than a bit counterproductive.
Looks good but for the ascorbic acid. I can’t do any vitamin C or citric acid without breaking out badly. I always have.
Maybe our local health food store might have something like that or samples of that stuff. I’ll look into that avenue anyway.
Oh, yes, I am very aware of it, and it likely plays a role. The issue is getting enough probiotics in me to help.
You do learn a lot by yourself. The internet is a great resource.
That sounds just like what the doctor was talking about.
He said that sometimes a few months off food seems to let the body adjust itself and when you go off it, you can eat again.
I noticed that he said *sometimes*.

I’ve been taking Vitamin D, although not that much. And been getting plenty of sun this wonderful summer.
I’ve had blood work for that and it shows normal levels, just like everything else....
There has been no diagnosis other than allergies. It’s been a life long thing and I do not take much in the way of medicine. Right now, it’s a couple standard anti-histamines, Singular, abuterol for a few weeks (until weed season is over) and some CaMg supplements and vitamin D.
This is not side effects to medication that I can figure.
I did do the allergy shots route and that helped TREMENDOUSLY for my pollen allergies but during that same time the food reactions have continued to worsen.
Since you and your husband have allergies (and from what you say, your daughter having issues), have you tested your residence and surrounding area (underground waste, old mines, drinking water, molds, etc)for possible causes.
I’ve been tested several times in several ways for different forms of celiac and all have come back negative.
I actually don’t mind the suggestions on the forum. You never know when it might be able to help someone else.
I disagree only because there are a lot of other people who will benefit from what is shared = esp the non traditional medical helps.
At many threads I learned a whole lot in these issues that would not have been there had it all just been shared by FR mail
