The right Riesling can work well with salmon sometimes.

Therein lies the rest of the story...I have never developed a taste for salmon.

My first intro to wine was back in 1980 or 1981.

It was a bottle of Boones Farm Apple Wine that we asked a bum to buy us (along with some beer and sloe gin) at a local liquor store.

I have done some serious upgrading since then.

Although I have to admit, the Boones Farm was not too bad!

Reisling is too sweet for my taste.

Maybe you should try a dry Riesling. They do exist.

Have you ever tried the Chat. St. Michelle (WA)?

Fairly dry for a Reisling grape.

Just this past week, at Kings Seafood (Las Vegas), I had a glass of that with a Shrimp & Scallop Penne Pasta in a basil pesto sauce.

One of the best meals of my life!

The Reisling was perfect.

If the Reisling is properly chilled and kept so, the sweetness minimized.

I would have enjoyed reading the governors were served Danish wine.

That would make front page news at the NY Times and WaPo.

It's good to see home grown products receiving awards and recognition.

Great Uncle Rob't L. Darragh built Sheldrake Point way back in 1894 or so, ran steamers on Cayuga Lake. Spend Christmas at Interlaken a few miles away. Stopped in at this area back in summer, cool selection...too bad I don't care for wine! Very quiet, beautiful area in summertime.

Haven't tried that particular Reisling. Have enjoyed several nice wines from WA in the past year or two.

BTW, a Muller Thurgau (Germany) is the driest Reisling I used to drink when I lived in Deutschland.

Have no idea as to its availability here in US.

Reisling is too sweet for my taste.

You must be drinking cheap German hock. Try a nice dry one from Alsace or Australia. Penfolds, Wolf Blass, Leasingham, Jacob's Creek and Lindemans all have good versions for relatively little money. Wolf Blass Gold Label is one of my favorite white wines. Another one I like is the moderately dry, fruity Eroica from the joint venture of Chateau Ste. Michelle and Dr. Loosen.

Like you, I'm not a big fan of off-dry wines. For dessert or an aperitif, I love the real sweet ice wines, port, Sauternes, Tokaji, sherry, vin santo, Banyuls, you name it. And I drink oceans of dry reds and a few dry white wines. But I don't much care for the in-between white wines that are sweet but not really dessert wines. They are tolerable with spicy cuisines like Thai or Mexican, but for that I'd just as soon drink beer.

That reminds me...there is a marvelous restaurant at the Four Queens called Hugo's Cellar. Fabulous wine list, and a top notch sommelier. Have been to that restaurant every trip to Las Vegas for the past 10 years. Oh...the food is divine too. My favorite is the veal Oscar.

Chateau Grand TRaverse -- one of the great wines of Michigan.

I do not care for NYS wines. I can be convinced otherwise...

When matching sweet wines with dessert try to remember to choose desserts that are less sweet for the most complimentary flavors.

This is extremely good advice. Cheese, nuts, fruit, dark chocolate, etc. Nothing too sweet or it will make the wine taste thin and acidic or metallic.

I once went to a lovely dinner at a friend's house, with several courses expertly paired with delicious wines. For dessert, however, she had made some kind of peppermint chocolate cake. It was delicious, and would have been fantastic with coffee or a little schnapps, but sadly overpowered the port she served with it.

Strawberry Hill for me, but I wasn't counting that. My first was a tip, when I was a valet and our resort hosted the Newport Beach Wine Festival. Everything before that is a blur as far as appreciating wine.
