You have an amazing number of ways of saying "I can't back up my wild-eyed claims."

Bottom line: You made a fantastic, and apparently untrue claim. Having been called on it, you are stamping your foot, taking every opportunity to compare yourself to the originators of atomic theory, and generally acting like a child. I won't bother to give you the benefit of the doubt next time; I'll assume your statements are indefensible.

The secret to pie crust is not to mix it completely, so the gluten doesn't develop all the way. Gluten makes dough tough. Also, try pastry flour for pastry. It's softer, less gluten.

Not a problem with bread dough, you can mix that to your heart's content. Use bread flour.

Lightly mix cake, too, and try cake flour.

If you're originally from the South, try White Lily flour -- even though it's all purpose, it's very soft.

You can keep all your flours fresh by sealing them up tightly and storing in the freezer. Your mama probably cooked more often than you do, so possibly her flour was fresher.

Also, do you use a sifter? That makes baked goods lighter.

BTW, when I said "your mama probably cooked more often" that wasn't intended to be an insult.

Seems like most of us these days eat out more or use frozen foods, since so many of us work.

Good hints...I will keep them in mind...yes, I am sure my mom cooked more from scratch, more often than I do...I guess my favorite thing to make from scratch is any type of dough that is yeast based...whether I am making bread, or coffee cakes, or doughnuts, I love making yeast based doughs......I love the smell of yeast based doughs rising...that smell permeates the whole house, and I just love it...

I knew exactly what you mean, about my mama...I knew it was not meant as an insult...most of us today, do eat out more often, and use more frozen foods, and more convenience foods...

Good call! I made chili for the first time using ground pork recently (2 to 1 ratio pork to beef) and noticed how much better the flavor was. I will never make a solely beef chili again.

Same holds true for spaghetti sauce.

( I came to catch up on the crevo fight and a food fight breaks out! )

I've run across this particular 'mistake' before in another forum. It still makes me laugh, although this time it came from a poster who sounds very much like a 'Loki' troll - a troll who adopts the mannerisms and arguments of the opposition in order to 'punk' his compatriots.

A few years ago in the other forum I frequent, I pulled a 'Loki' that got one of my posts nominated as POTM.

I don't know really.. The Ichster is very persistent.. Something in me has feelings for the Ichyosaurus.. I don't know why..
