If ground beef is labelled 85/15, etc., then that means it’s 80% lean beef and 20% fat. It’s just a measure of how lean the ground beef is.
80/20 is generally considered to be the best ratio for grilling burgers, as it won’t shrink away to nothing, but still has enough fat to keep it nice and juicy. :)
Dang. I changed the first part of my example to match your question, but not the second.
85/15 = 85 percent lean, 15 percent fat... lol
