“I’d make the homeless catch the things themselves.”

I once saw a person whom I considered to be a likely recipient of public assistance trying to stuff a live one in the trunk of her car. I had to commend her for her effort in feeding her family and cleaning up a public nuisance, in addition to providing me with some much needed entertainment.

Will they feed them on a fattening up diet for a few weeks before slaughter? They tend to be a little on the lean side.

The recipients are not going to want wild goose.

Tough.

It's free.

If they don't like it, they can get off their collective ass, earn some money, and buy themselves food more to their liking.

Or they can learn to eat goose.

Simmer the remainder of the carcass to make a soup stock.

Wow, what a seriously good idea. Declaring open season on geese would help to fill quite a few freezers. May be better to have the harvest handled professionally - would hate to see what would happen if the homeless were issued machetes and told to fend for themselves.

The problem is it will just go to waste, cost a lot of money, and the winos, addicts and drifters will just get their chicken nuggets on top of the discarded geese.

I’ve been hunting Canada Geese in WI since the late 80’s.
In my experience, only younger birds are suitable for roasting. Older birds - and they can live to be 20 years or longer - are tough as shoe leather. Most of the time I cut out the breast meat, thighs, and legs, and have the local smokehouse turn the meat into sausage sticks which taste as good as venison sausage.
I would think that the ‘needy’ people of NY would prefer good sausage, as well.

One goose egg is equal to two and a half chicken eggs. No difference in taste, scrambled or fried. I have duck eggs that are about 1 and a half the size of chicken eggs. Smoked Canadian goose is excellent.

What about pigeons?.........squab is nice..............

I remember walking down a street in Manhattan years ago and seeing this guy, sitting in the open passenger side door of a station wagon, feeding breadcrumbs to a small flock of pigeons on the sidewalk in front of him. All of a sudden, he pulls out this net and throws it over the pigeons. He must have scooped up 20-30 of them, threw them into the back of the station wagon and quickly drove off.
I always wondered if they wound up in some fancy NYC restaurant as squab.

Back in the early 70’s when I lived and worked in Manhattan I watched a guy across the street scatter something around on the sidewalk then duck into an alley. It must have been some kind of food attractive to pigeons, because a dozen or so of them were on it in a matter of minutes.

When they were concentrating on feeding, the guy popped out of the alley with a large, long handled fisherman’s landing net and netted at least 5 or 6 of them.

Many years ago, my favourite Chinese restaurant (in an east coast USA city I shall not name) was shut down by the local health inspector over problems with their Peking Duck.

Seems they were setting out bait in the alley, trapping wild ducks, and slaughtering them in the kitchen.

Too much authenticity?
