Not to put too fine a point on it, but I would say it’s the same cut of meat, but not brine cured - and not mostly fat like American bacon. But what do I know, I only know what McDonalds has been telling me all my life.
OK, what Americans call Canadian bacon, because of McDonalds, is what you canucks call back bacon. Apparently the American style bacon is belly bacon or streaky bacon. Also, apparently what McDonalds sells isn’t back bacon at all, but slices of HAM cut in a circle.
