For 30 years that guy’s made millions off of fake cheese and they’re going to slap with a year and $100 thou fine? In all this time has anyone complained about the cheese? Reminds me of the soap in the mashed potatoes in “Catch 22”.

Relax, you probably could use a little fiber in your diet. The Germans used saw dust in their bread during WW II. They also ground acorns for coffee. It all comes out in the end anyway.

Cellulose is just plant fibre. It is added usally to kepp the cheese from clumping. As long as it stays below 5% it should be fine.
Cellulose is in many veggies too.

No big secret.
They put small amounts of cellulose in grated or shredded cheeses to prevent the cheese from clumping.
Not just in Parmesan either.

Paper is wood pulp. Its a fiber after the pulp is cooked down, which looks like oatmeal..and that is exactly what they call it at the mills.
