Scrumptious Creamed Spinach

• 5 lb. spinach, fresh, picked clean
• 2 qt. Béchamel sauce*
• 1 lb. Gruyere cheese, shredded
• 4 Tbs.. Kosher salt
• 1 Tbs.. white pepper, fresh ground

1) In a sauté pan, melt butter and add fresh spinach.
2) Sauté until wilted.
3) Add béchamel sauce and Gruyere cheese.
Season with salt and pepper. *Bechamel Sauce

For a variation on a classic Sauce Bechamel, try chicken broth and half-and-half together with a roux of butter and flour flavored with grated onion. White pepper, thyme and cayenne give an earthy bite to the sauce.
