ok, let’s look at “sola scriptura” from another angle.
from the Scriptures alone, please tell me what the correct canon of Scripture is? is there an inspired table of contents that we can refer to or is there one book of the Bible that lists all the canonical books?
You are begging the question. What I believe about the Old and New Testaments has nothing to do with whether or not the Bible alone is the sole rule of faith for Christians.
My question for you is where the Bible rejects ecclesiastical authority.

Settle that amongst your own, the Copts, the Ethiopic Church, the Greek Orthodox, the Russian Orthodox, et al, close the open questions left from the Council of Trent and then get back to us, OK?

I don’t know how to explain it any better than I have. In my opinion, Protestants do the exact same thing they accuse Catholics of doing.

You've been taught not to understand it. When Jesus overcame temptation or false teachings, He rebuked them both with a "It is written". You can follow the example of the life of Jesus or stay with Catholic dogma.
Apparently God can create the Heavens and the Earth, but has trouble with English. Perhaps its just American English he has trouble with.
