We will buy a whole hog from the butcher, some cuts, mostly sausage-d up for us, but we will get the pork bellies and smoke them ourselves at home. We cut down an apple tree a few years back and stacked up the wood just for this purpose. We also have some peach wood. Then we slice it on our meat slicer as thick as we want it.
It's funny these fluffs in 'Frisco think they've come up with some thing new.
