PASTA DOUGH 2 1/4 Cups flour 1 t salt 1 T Olive Oil 2 eggs 1/4 cup water Mix all ingredients. Turn out on well floured board. Knead until smooth and not sticky. Cover with bowl and leave to rest 30 minutes before rolling and cutting.

PASTA MEAT FILLING (appox. enough for 10 people) 2 large Chicken Breasts salted and peppered equal amount by weight of Pork Steak salted and peppered 4-6 oz of Parmesan Cheese 6 eggs beaten For every pan full of meat, have 1 stick of butter melted in pan with, 1/2-1 onion chopped, 1/2-1 clove of garlic minced. Brown slowly in pan covered, till meat is well cooked, turning over once. Refrigerate over night. In a meat grinder, grind all the meat with the pan drippings. Add Cheese, and eggs, and mix well with hands.

CITY CHICKEN Equal amounts of pork chops and round steaks cut into 1 inch cubes. Alternating meats, skewer cubes onto 6” meat skewers. Salt and pepper Roll in beaten eggs Then in crushed soda crackers, till well coated Fry in pan in oil deep enough that meat is 1/2 way submerged, Turn meat over when crust is golden brown.
