Heritage pork almost tastes like an entirely different animal.

absolutely, flavorful like boar, but less gamy. Both chickens and swine are omnivores and naturally voracious foragers, so I tend to laugh when chickens are sold as 100% organic raised on vegetarian feed, the same is true of pigs who end up on soy based feed.

Yep. Heritage pork is fabulous. Everyone should at least try it for comparison purposes.

Note that if commodity pork is what is available, use the new instructions and recipes from pork producers organizations such as:

Heritage pork is different. So are heritage lamb, turkeys and chicken.

The same rule applies to ocean salmon versus farmed salmon.

Ocean salmon eat other critters in fresh ocean waters, and the farmed salmon eat chicken feed not in fresh ocean waters

Chickens used to eat bugs, grasshoppers & flies. Those don’t exist any more where US chickens live.

Many years ago I saw a starlette, Belinda Carlisle, on Johnny Carson stated she had a "potbellied pig" as a pet. I had a good belly laugh and Johnny had an incredulous smirk on his face as he, being raised in Nebraska, knew what horrendous smell pigs have.

Never heard what happened to the pig but I think it wound up on somebody's plate(eventually)

My maternal grandmother, 1897-1969, used to tell me that when she was little, she would play with the piglets that her family raised. She said they were smarter than dogs. And when the time was right, she watched her father slaughter them.

Life is rough. Too bad it’s not that way anymore.

About 8 years ago, Mr Kitty and I bought heritage turkey for Thanksgiving. Cost an heck of a lot.

I learned to be thankful for Butterball. LOL!

Rosie O’Donnell was in town today. Does that count as “PORK on the Hoof”?
