Don't let the word "canning" scare you. Canning beef is easy and I will walk you through it step-by-step. You'll be able to make good use of beef sales and not have to depend on a freezer to keep it in. Below are the things you'll need. I use a Mirro Pressure Canner and this recipe is for pints.

How to can beef. I don't know about anyone else..but I started canning beef a few years ago. These are the instructions I used then..and now. I just thought maybe someone else out there was ready to take an active part in food preparation.

We have a very reliable source for our beef. I use this set of instuctions for canning it. I am spoiled now!! We are almost out and we will be canning again real soon.

Haven’t done any canning. Interesting. I tell you what, even on sale beef is so expensive I almost never eat it anymore. I try not to buy any meat over 2.99/lb.

Unfortunately our home is a little on the small side and i don’t know where the heck I’d store this stuff. The garage is out because it gets super hot in the summer.

Sigh.

We have a small house too, so I know what you’re saying. I put up some shelves in the basement and that’s where all of our canning goes. Meat, vegetables and fruit. We still freeze meat and stuff..but I am a big fan of the canned meat this gal cans. We’ve used the beef and the chicken and turkey canning instuctions. It’s really easy to follow. We were sure nervous the first time out!

Oh, and if you figure the 1 pound for 1 pint..it really is pretty darned close. We’ve bought 25 pounds at a time. I think that makes two layers of pints in our pressure canner. But heck, a fella could just as easy buy 10 pounds and do one layer at a time. Helps out with the pocket book.

After canning..even the toughest meat seems very tender. Buy on sale a little at a time. By winter..you could have quite a little nest egg of food!

Instructions:
1) Get a can.
2) Get some beef (not too much - see step 3, below).
3) Put beef in can.
4) Eat (later).

Call your local butcher shop and see what 1/2 a cow runs. I suspect it is a lot less than $3 per pound. Would need a freezer though

Done tons of hot water bath canning but have never ventured into pressure canning. I think my mother’s fear of pressure cookers exploding tainted me.
