Actually, it was British Butt that got whipped at Chalmette. And a "Frenchman," the pirate Jean Lafitte and his men were a key part of the American defense, so yes it is appropriate.

Where the heck do you get good nectarines this time of year? Plus lamb sucks. Should be serving BEEF! A “scent” of the trinity? The trinity, especially in jambalaya, should be savored and swallowed and should add depth to the meal...
