I would definitely try to eat a properly prepared iguana. Been waning to eat alligator for a long time.
The most exotic thing I’ve ever eaten was ostrich loin. And, no, it didn’t taste like chicken. It looked and tasted like beef. Very tasty.
Ostrich is freakin’ delicious. DELICIOUS! What’s not to like about a giant bird made out of steak?
Gator to me is as chewy rubbery as it looks. Ill take a pass on the iguana too however if it was the only food available id partake of it charbroiled.

I ate alligator in Louisiana a while back. Its a great way to lose weight, each bite takes you about 26 minutes to chew.
The absolutely very best meat I’ve ever eaten was moose meat taken in Ontario in the late 1960’s. Sauteed in butter and onions was the best my immature taste buds ever experienced. Maybe the excellent flavor and taste comes from the fact that moose eat aquatic plants and don’t forage nasty things like Cedar and other plants that deer prefer.
Had it prepared Creole style with tomatoes, onions and green pepper ... pretty good. Reminded me of a slightly fishy pork roast.
Fried gator tail is great. Iguana? Hmmm!
I had iguana in Guatemala. It was stewed in a seasoned sauce and served with corn tortillas on a banana leaf. It was really good.
