The delicious pecan pie is made primarily with corn syrup, pecan nuts, salt and vanilla flavoring with some variations including sugar syrup and molasses or maple syrup.

Pecan pie is undoubtedly one of the South’s greatest culinary achievements.

I remember one of those old-time cafeterias in North Carolina, where the pecan pie was so good that you needed to come early in the day to even have a chance of snagging a piece.

And it didn’t need whipped cream or ice cream either. A well-made pecan pie stands on its own, although a good strong cup of coffee on the side certainly doesn’t hurt.

For those allergic to pecans, make this Southern deliciousness.

PEACH COBBLER

BATTER Combine cup ea flour, sugar, 2 tsp b/powder, 3/4 tsp salt. Stir in 2/3 c room temp milk, room temp egg.
Pour evenly over 1/2 c butter melted in 9x13" pan.

FILLING Spread over combined 28 oz can sliced peaches, drained (or use 2 pkg frozen peaches),
cup sugar spiced with tsp cinnamon, 1/2 tsp nutmeg. DO NOT STIR PEACHES INTO BATTER.

Bake 35-45 min 350°F (batter rises to top and is golden brown).

SERVE cobbler warm with scoop of vanilla bean ice cream.

Rum instead of Bourbon and vanilla.
Brown sugar added to the corn syrup.
The writer of the piece says nothing a bout the crust!
Butter or lard should be used there.

Had a waitress in NJ once offer me a piece of “Pee-Can” pie.

I said, in my best hick drool, “Ma’am...where I come from, a pee-can is something you take on a long drive. Not a desert.”

A “pe-con” is something we eat. A “pee-can” is something we put by our beds at night (as told to me by an elderly Georgia lady)

The choice of July 12th strikes me as a nutty time of the year to celebrate pecans, considering the seasonal pecan doesn’t mature until fall and the pie goes so well with pumpkin pie as two classic Thanksgiving desserts.
