There are two basic reasons not to use water bath canners/pressure canners on glass top stoves...

1. Weight - a full canner can be 40 pounds - risking cracking of the stovetop.

2. BUT, main reason is that the base of those canners is much larger than the heat circles on the cooktop. This causes intense heat to be applied to a large outside the designed area which can cause the stove to fail.

OK, it can be done, but you need to use a smaller canner to avoid problems - lots and lots will post that they have done it for years, just like I have carried over a ton in a half ton pick-up. Sooner rather than later though you gonna have troubles...

I went to a Mormon church several times with a friend 40 years ago and they were very big into food storage and survival even then. My mother thought it was such a great idea that she bought a food dryer and we always had several gallon jars full of dried peas, carrots, peppers and beans to use around the house.

Cook - Can - Dehydrate

I have lost power for two weeks in an ice storm - Even though I have a generator and inverter, I canned most of it and dried several batches (I have 3 dehydrators), I opted to prepare it for long term storage rather than continue running the freezer on the generator - however if you don’t have propane stove or a generator, you may have to resort to other methods.

16 brick Rocket Stove, kerosene Butterfly stove both of which will operate your pressure canner. Remember, as long as there are a few ice crystals in it, it is still good to eat.

You should ALWAYS keep plenty of jars on hand - I keep over a year’s supply of lids and save the used ones (they CAN be reused in an emergency - inspect them carefully before using and boil them a bit longer than normal. (Note: I can about 80 cases each year.)
