Ethanol is the big money in Iowa, maybe the teachers union/support is the second most influential factor. I worked in Iowa politics (mostly volunteer) for almost two decades. Corn porn is king.

Who cares if Iowa is 3% black or 30% black? Blacks are irrelevant to Republican caucuses or primaries. Most all vote in the democrat contests.
40% of Iowa's republicans are evangelical, which is close to the national average. As you know Santorum won Iowa four years ago and he was fourth in the Iowa polls, so he won on the strength of the evangelicals. Iowa is difficult to poll because no one knows who is going to show up to vote. This is why no one wants to drop out because they are holding out hope their supporters will show up on caucus night.
FWIW, my two choices are now either Cruz or Trump and there are pro and con reasons for both. I don't really understand why people foam at the mouth if a poll doesn't agree with their choice. I find it hysterical, actually.
You mentioned that Trump isn't going to allow Iowa to go first. Well, it really isn't his choice. It is the RNC that makes the choice and the RNC is made up various people voted on by state republican parties which is made up of people voted on by the local republican parties.
One of the things Reagan did when he ran for president, is he had people organize locally. Reagan supporters more or less infiltrated the local and state republican parties. These Reagan supporters then voted their own to represent local and state republican parties. The establishment, of course, was upset that they were kicked out of their posts amid much boisterous protest. This is how Reagan took over the Republican party. He had his supporters at all levels of the party and those supporters were able to put their weight behind his candidacy and made sure the party worked for Reagan's success. Trump is doing none of that and that is an oversight that may come back to haunt him.
For example, my local republican party is anti Trump and I would not be surprised if my local and state party sabotaged his effort if he is the nominee. And yes, they would do so shamelessly and with no apologies and there is really nothing Trump can do about that.
After all, it happened in the governor's election here. The local and state republican apparatus thought the nominee was too conservative and the establishment pouted that their nominee lost the nominating convention and the apparatus actually worked against the republican nominee in the general election, who lost the election by fewer than 10,000 votes. This was the Virginia's governor election of 2013. The establishment refused to support the conservative nominee and the sitting Lt. Gov, a republican actually endorsed the democrat and to this day, the former Lt. Gov is unapologetic (he was the one that lost the nomination).
So please don't believe that Trump can order and/or decide which state votes first. That is the decision of the RNC and if Trump does nothing to make sure his supporters run for these behind the scenes party positions, then these establishment moderates will defy him at their will.
Because Carson's numbers are too high or too low? This poll shows him tied for the lead - two other polls recently released showed him leading all alone.
Actually that would be state parties and / or the state legislature. The RNC could try to manipulate them with delegate rules but they can't actually force them to do anything.
