Maybe I am dense but I don’t know why Paul said that
as an educated Jew Paul knew that the Hebrews were
always forbidden to eat certain foods because they
we’re unclean.

It was not something just happening in the last days
In fact due to Paul’s teaching God’s people are eating
anything where before there were things they did not eat.
