Ever since these and "smoke eaters" were around, I've often wondered why these units, since they work at the molecular level, wouldn't be quite effective in defeating any airborne pathogens. (like viruses)

They are. You can, with caution, put an ozone generator in a big box outside and give groceries, packages, etc. an ozone bath, that WILL do the job on any exposed pathogens.
... ionizers, not so much. They will attach an ion to a pathogenic particle, and drag it to the nearest oppositely charged surface, without necessarily destroying the pathogen. Ozone will oxidize a pathogen, destroying it.
