The ‘new wave’ of so called ‘security’ is to encrypt your hard drive. Or ssd device. That way if you have to send the drive for warranty or replacement, they can’t read your data. You can’t read it which is why you send it back. But most likely they will be able to read it.

What if you have to move the ‘drive’ to another machine, will you be able to access any data there ???

It’s gotten worse not better — thank you hacker world and evil one.

I agree, Linux Mint is the way to go. One file holds all the email and can be saved to an external hard drive. For Thunderbird it is the .thunderbird folder. I save it weekly onto an external hard drive. Also, I can make a complete image save of the computer with CloneZilla once a month. That saves everything onto an external hard drive. With CloneZilla, I can take a bare SSD and write the complete system onto it and plug it into a computer and have a clone of my base system. It is easy to do.
