In the Mediterranean area they do use olive oil for frying because it's so plentiful. The taste is great but it doesn't have as good cooking properties as higher temperature oils such as canola. (canola = soy bean)

But although vegetable oils such as corn and canola don't have cholesterol, they still have calories.
