To: GBA

My story is the same — grew up around gardening and canning and never got involed. Now i’m learning canning processes and techniques and my 25 yr old daughter is learning and doing right along with me. Now is the time to learn and hone these important skills.

I do a lot of drying. Because I live alone, but cook from scratch, sometimes I wind up with more of a product than I can use before it goes bad. Carrots and celery are two prime examples. I cook a lot using onions, carrots, and celery, but a bunch of celery or 2 lbs of carrots will go bad before I get through them.

So I dehydrate what I'm not going to use fresh, and it works just as well for soups, stocks, and roasts.

Saves money, and it means I've always got some put back, just in case...
