Very nice in technique and simplicity; looks really tasty, so thanks, I’ll try it out on my comfort food gang. The crab: has appearance of ersatz crab, am I wrong? Have you done this with other shellfish, shrimp, even lobster?

It is surimi, you can use lobster or shrimp, I would use raw meat.

Could probably use some almost finished black sea bass or other firm, white fish.
