I agree, but some people like it that way. I like the coarse, corn-flavored stuff with plenty of salt.

You betcha! Coarse texture with lots of little holes to soak up pot liquor, especially from turnips or collards! My dad would crumble cornbread in a glass of buttermilk and call it dessert.

Gotta have a hard brown crust ont he bottom and sides, too! You only get that by cookin’ it in an iron skillet with hot grease into which the corn meal batter is poured for baking.
