Since your going to do a Virtual Machine try several distros. Start with CENTos, Ubuntu, Debian, Fedora etc. My favorite is Debian. Just install minimal installations in multiple VM’s and play with em. You’ll find one you like.
Within each distribution you have the choice of Desktop environment - ie Gnome or KDE or other. You gotta decide which Desktop you like also.
