We are investing this year in a 15lb live turkey being dressed on the Monday before turkey day. Right now, he/she is being raised on the farm we bought a share of this year.

I’ve never (a) bought such a big bird & (b) spent so much on one so I’m a little nervous about messing things up. Oh, I’ve done turkey all kinds of ways, spatchcocked on the grill, whole on the grill, roast in the oven. I plan on brining, but beyond that....Help!!

Distant relatives in the Chicago land area has us over for T-Day eon's ago when we were still newly-wedish and they did per the original magazine article. We have been doing it ever since.

We do spatchcocked chicken all the time, but have never done a turkey.

Naw, that 15 pounder is a chick. Go for the 25 pound one and you’ll have more leftovers, yumm!

My mother told me when I was very small my father(a very frugal European) bought a live turkey some months before Thanksgiving.
He planned on fattening up the bird and butchering it for the holiday.
The turkey got loose, terrorized the neighborhood for more than a month.
Don't recall the outcome but we didn't eat it.
