Eat more than just the eggs. Sturgeon is delicious. Put a little mango salsa on it....yummmm.

They certainly do, but I’m not sure anybody eats Florida sturgeon caviar. In CA not long ago, the Delta was full of sturgeon and there was a sort of black market involving Vietnamese fishermen and Russian entrepreneurs, who would illegally harvest the sturgeon, get the caviar...and process it in motels along the highway! If they didn’t get caught, they sold it as Iranian or Russian caviar.

I’ve never heard of a market for FL sturgeon eggs, but maybe our Fish and Game is more vigilant (and definitely armed).
