You might like this, it doesn’t have any pork in it but us country boys have to make do. I made some killer bean soup twice last week. I soaked 2 lbs navy beans overnight. In the crockpot with water 2” over beans for 5 1/2 hours on high: The secret ingredient was 2 tablespoons of vegetable oil (Smart Balance Omega), 2 small okra cut up, 7 or 8 small red pepper pods (Hot) do not cut up, seasoning salt and pepper, 1 teaspoon Mexican chili powder, 3 small green onions cut up.

Looks like I’ll have to grow me some of these. My peppers did really well in the garden this year. Whenever I have sinus problems I eat some buffalo hot wings, it sure clears that up immediately.

Datils were likely brought from Cuba in the 1500s or 1600s by Menorcan settlers, St. Augustine shares a lot of heritage with European Cuban families. They are close to Habeneros but the flavor is different, sort of earthy and musky. They grow well in sandy soil if it is moist and you add some Miracle Gro. In a big pot the plants can get huge and last 2 or 3 years.
I ran some through the blender and dehydrated the paste, you need rubber gloves to handle the results, but the flavor comes through pretty good.
I see pictures online that I doubt to be authentic, the shape doesn't seem to be right.
If you cross pollinate with good Bell peppers you get a mild but spicy fruit with great flavor, super in salads!
You have to be careful with pollination and protect your original stock.

I came by the pond on the way home today, Roseate Spoonbills all over the place, probably more than 100. I'll try to get back early next month, got permission to enter the property from a better angle. The mobility scooter has limited off road ability, got to plan ahead or get stuck.
If Pride Mobility knew what I was making that little scooter do they would go bonkers, but I bought it to do what my legs won't do any more. I just carry extra fuses, LOL!!
The scooter breaks down so it will fit in the trunk, a bigger scooter won't do that.
To look at it you would never believe where it will go!

What did you do eat raw gator?
I’m getting ready for deer season in west central. I only border a swamp though.
