Yet, I can remember sitting in history class and hearing that the Indians literally ate “every part” of a bison, and were called noble for doing so.

I have no problem eating “every part” of an animal. Even bone tissues and sinew contains nutrients that aren’t normally found in muscle tissue.

where worlds collide... funny, the McDonald's south of Chinle, AZ (on the res) has a large print of a painting of these nobles running a huge herd of bison off a cliff.

Not too certain the implication is they used every part. :)
