If they are guaranteed 20% of the food sales, what governs the server’s performance after your order has been taken? If the service from that point forward is poor, the customer is stuck. The server has made his money and has no further incentive to provide good service, unless it is the kind pf place that charges for all drinks.
The Customer can always alert management, and likely that server will be out of a job if they get too many complaints.
I would think the incentive to continue providing good service after taking the order is keeping his/her job. If service is bad, mgmt will hear about it and a poor waiter would be history.
no the good ones will get your food to you quickly to make sure they can rotate the table for the next order - if the food is late you sit and they have to wait for you to move to get to the next check and bigger sales.
1. The server will want you to come back... Repeat business keeps restaurants in business.
2. If the server gives bad service, you can always talk to a manager.
