Fair enough. However, this practice seems to me to be merely a method to stick it to the consumer. If you are fine with it, so be it. I have no doubt that the market will indeed dictate the failure of this experiment.
My wife and I are pretty frugal and don’t go out for dinner very often. When we do we usually look at the menu before we get seated, and if the prices are too high we don’t hesitate to move on to another restaurant.
