My question is this:

When China abandoned the Wade Giles system of transliteration between Mandarin and English, and Peking became Beijing based on the new transliteration between the languages, why didn’t Peking Duck become Beijing Duck???

For the same reason musicologists and old Sinophiles study Peking Opera, I would guess.

I guess for the same reasons, Nanjing is still referred to as Nanking in history. Wo bu zhe dao!!!!
