The way Leno related the story, the Intern might have been talking tongue in cheek.
Leno: I really don't like Mexican.
Intern: Whoa, that is kind of racist.
Leno left the 'food' part out after Mexican - so I could see the Intern needling him.

Racism is the act of disagreeing with any liberal about any topic.
Leno doesn't like Mexican food. That is disagreement. Presumably the student is a liberal.

I am not “Mexican” but I sure like so called Mexican food, that is the better ones.
El Pollo Loco is one, Rubio’s is one. I suppose Chipotle, in some peoples’ minds Mexican, is another.
I’ve had Mexican food in Texas, and in Arizona, but I like those above better.
And yes, I know that all of this is not “authentic” Mexican food, which would be found in Mexico itself.
For the record, my favorites go thusly: Italian women, German cars, Mexican food and Irish music.

I once worked with a guy who, no kidding, at a restaurant when asked about his coffee said, and I quote: "I like my coffee like I like my women-hot, sweet and black."
We all just about died.
Of course, he was Black, so it was "acceptable".

Just yesterday a friend who was getting frustrated with a tech support droid said something like “What do you think I an, a Polish joke” ? Tech support droid said he was extremely upset by her racist remark and hung up on her.

The more "authentic" Mexican food you can find in immigrant neighborhoods is shall we say probably NOT to an American's tastes.
Menudo, usually made with tripe.
Beef tongue tacos.
"Face meat" burritos. "Boop, you haven't lived until you've had tacos de cabeza!"
