That should work, in fact you could easily cut it to half the height and have 2 growing bins.
I have a friend who has an endless supply of pallets. It’s about 2.5 feet by 3.5 feet and 4 foot tall. I estimate if I can grow it all the way to the top before harvest I can easily have 200 lbs of potatoes. But only time will tell. This the first time I have tried this.
