Few places remember how to cook a steak — nearly all poach them in plastic. It’s very convenient for the restaurant, and ignorant consumers believe what they are told.

I haven’t found a restaurant that can grill a steak the way I grill mine. Charcoal grill, seasoned with a light coat of grass fed, hormone-free butter and a light dusting of chipotle powder, paprika and sea salt, rare to medium-rare and smoked with a combination of whiskey barrel and tabasco barrel wood chips.
