The reason you only hear about it from time to time is that the media is too stupid to understand the danger. A laser that blinds a flight crew could kill everyone aboard. There is no warning unless a laser detector see its first and there's no single goggle or windshield coating that will block all types of laser.
You might be slightly more aware of the issue if you were a passenger on a flight where the crew was attacked by an sick idiot with a laser light. Then you might have a very short period of time to assess the problem before you were killed.

Actually there is... A high definition LCD screen with redundant external cameras. Drones are flown that way all the time, and I’ve actually flown such a craft with LCD goggles.
