I didn’t even read much of the article and I’m hungry.
Of course he’s “secretive.” The cheese stands alone.
It is. But Domino’s pizza is awful. I try to tell everyone I know. I don’t eat pizza much, but there’s a Little Caesar’s around the corner that I frequent a couple of times a year,
Mostly I eat frozen pizza: DiGiorno’s, the Aldi’s take-off of DiGiorno’s, or Jack’s bacon cheeseburger pizza.
When I worked at Pizza Hut, we used Lucille’s prediced mozzerella. It might have changed since 1982, though.
There’s a Leprino location in Greeley, north of Denver, which is constantly expanding and hiring more people. I know a guy who was a Department Supervisor at Home Depot who left to be a forklift driver at Leprino.
Good for this guy. Me? I’ve been too picky and too proud.
But I’ve learned a lesson today - never be too proud or too picky that you wouldn’t make a million bucks making the cheese that goes on bad pizza. Perfection and quality ain’t everything.
Thanks, Cheese Man! I mean that sincerely, no sarcasm. If I can’t win trying to be great I might win trying to be mediocre. And I could use a serious win.

There’s a big Leprino factory in Roswell. No joke.
I’ve never had pizza from a chain — around here, everyone goes to actual pizza shops. Most pizza shops now use the garbage techniques the chains use, so you have to be selective about where you go — if the toppings look like little turds and come from frozen bags, no. House chopped sausage from a local sausage maker is a good sign.
That was a neat article, thanks!
I love the bit about Lester, his cheese maker, coming to work every day until he died at 95.
Ed
Al Capone used to be a big supplier ( or else ) of pizza cheese.
It’s enough to make your milk curdle.
I saw the word Corinthian and was reminded of Ricardo Montalban from the Chrysler commercials back in the 70’s
Buncha pizza snobs on this thread!
Take out/delivery is generally fast food in this country. That almost always means cheap and quick, but not high, handmade level quality. There’s nothing wrong with fast food—it’s an American made way to quickly feed a people in a hurry. I love it because I am a conservative who values efficiency, innovation and the success of business in general.
If you want the best pizza in the world learn to cook and make it yourself! If you like to spend a lotta money on something as pedestrian as pizza, knock yourselves out, but don’t look down your nose at happy working people’s eating pleasures!
I used to work for him in the office down on 38th. He was grooming his daughter Gina to take over.
Does anyone know if fresh grated cheese has a taste benefit over the pre-grated stuff?
I ask because I just found out that pre-grated, where it’s put in bags and sold, is coated with potato starch to keep the grated bits from sticking to each other. Since I try not to eat potatoes in any form I haven’t eaten any cheese since so have yet to do a taste test.
Pizza hut, papa johns, and dominos, is not pizza. At best an unreasonable (yes, unreasonable) facsimile thereof.
You want real pizza, you go to an independent pizzeria in brooklyn.
The rest of you out of new york state freepers ought to be ashamed of yourselves. ;-)
He must be the guy that cut the cheese . . .
Explians to me why all the pizza these days tastes like garbage. 60 years ago when you bought pizza, you bought PIZZA! Today ALLpizza and ALL Chinese food stinks. You have no idea what your missing.
